CHICKEN & RICE BURRITOS

2.5 c. shredded cooked chicken
1 pkg taco seasoning
3 1/4 c. water
1c. long-grain rice
2 T. oil
1 can tomato sauce
1 tsp. lemon pepper
1 lg. tomato
1/4 c. chopped green onion
8 tortillas
grated cheddar cheese

In lg skillet, combine chicken, taco seasoning, and 3/4 c. water. Bring to boil; reduce heat. Simmer uncovered 10min. Remove chicken mixture, set aside. In same skillet, saute rice in hot oil until golden. Add remaining 2.5 cups of water, tomato sauce, and lemon pepper. Bring to boil; reduce heat. Cover and simmer 20 min. Stir in chicken mixture tomato and onion. Heat 5 min. Place 1/2c. rice on each tortilla. Fold insides; roll to enclose. Place filled burritos, seam side down. Sprinkle with cheese. Bake 350degrees for 5 min to melt cheese. Garnish with salsa and guacamole.
